Although steamed rice may not play part in Parisi’s interpretation, sexy salty schiacciata bread can always be had on the side, to soak up every last drop.
In 1967 Antonino Parisi opened Adelaide’s first all-night pizzeria, Marcellina. In 1975 his son Andy established the now iconic La Trattoria – hangout of the hospitality crowd after their night was done, and the odd internationally famous rock star, actor, or race car driver. Fast forward to 2007 and his children have their inherited hospitality biz prowess awarded for Parisi’s, Hyde Park. Its modern dining room leads into a courtyard suggestive of traditional Italy. Simone Parisi keeps an eagle eye on all. Food is cooked a-la-minute with fresh seafood always on order. The menu charms with grandfather Antonino wielding an octopus. End with an affogato of Tia Maria doused gelato and espresso shot. Simone humbly offers, “We are just a busy restaurant”, but there is very good reason why this is so.
