Eliza’s Restaurant, is Hyatt Regency Coolum’s signature restaurant. Located in the heart of the resort, close to the Village Square, the restaurant is nestled in a grove of native Angophora trees that bask in the rays of each sunset – perfect for pre dinner drinks on the deck. As night falls, dining at Eliza’s can be summed up as outstanding food and fantastic wine, in relaxed comfort. The fireplace in the centre of Eliza’s remains a star feature and brings a natural feeling of intimacy to each table.

EXECUTIVE CHEF
Chef de Cuisine, Gareth Collins has a commanding repertoire of creativity, achievement and reputation. Prior appointments over the last 21 years include the Clarion Tradewinds Hotel Restaurant in Samoa, The River Café in London (working alongside budding chef Jamie Oliver), Ricky Ricardo’s (now Ricky’s) in Noosaville, Earth Bistro Wine Bar in Coolum, and Pier Nine in Brisbane.

FOOD & BEVERAGE
Gareth’s autumn menu for 2010 is an exciting offering of quality dishes created with only the best local produce. Zucchini flowers from Landsborough, soft-shelled crab from Moreton Bay, prawns from Mooloolaba, and pork belly from Byron Bay are the cornerstones of just a few of his exceptional creations using local fare. The Australia’s Wine List of the Year Awards granted an award of 1 Glass to the Eliza’s Wine List in 2008 Awards, and 2 Glasses the following year in 2009.

OTHER RESTAURANTS
The Village Square is next to the resort’s largest pool and offers a variety of lunch and dinner options. Choose from modern Italian, authentic Asian, delicious pizzas and more! There is also live entertainment at night during school holidays, the perfect accompaniment to a relaxing evening in the great outdoors.
Bruschetta Restaurant - A modern Italian restaurant in the Village Square, Bruschetta features fantastic Italian dishes. Fresh and interesting pasta, risottos and salads all Noodles Restaurant - Noodles is the eat-in or takeaway Asian restaurant featuring a selection of authentic dishes from South East Asia, prepared by their Thai and Malaysian chefs. Located on the upper level in the Village Square Noodles is open for dinner.
Pizzeria - Located in the Village Square, the Pizzeria offers a wide selection of delicious pizzas using a variety of fresh ingredients. Open daily for lunch and dinner.

King / Twin Rooms - Set in clusters amid peaceful, natural Australian gardens, the King / Twin rooms feature open-plan living area, furnished balcony or patio, work/dining desk and fast Internet access. President Villas - two bedroom, two bathroom Villas feature 85-sq.-metre apartment style accommodation. Ambassadors Villas & Residences - The double-story, 127 sq metre villas feature two bedrooms, two bathrooms (each bathroom with its own spa bath!), while triple-story, 203 sq metre residences provide three bedrooms and three bathrooms. All guests of the Ambassador Club receive extra special treatment – French champagne, wine and canapés each evening, as well as daily continental breakfast and refreshments throughout the day served in the Ambassador Club Lounge, plus entry to The Spa – all included! A heated swimming pool and two tennis courts are also provided exclusively for the use of Ambassador Club guests.
