Three Bistro is so named because it is run by duo Micheal Conrad and David Pugh (of the famous Restaurant Two) plus a third cog in the wheel, the talented Peter Marchant. Pugh and Conrad have had a successful partnership for ten years whereby they have established Restaurant Two as one Brisbane’s leading dining destinations. Peter Marchant has now joined the team to help run both establishments. While Restaurant Two encompasses fine dining at its best, Three Bistro brings out the lighter side of good food. Housed in the Emporium Hotel complex, Three occupies a modern space that is wrought with abstract designs. The decor features high ceilings filled with cubed light features, one of them a brilliantly artistic arrangement of globes that creates a honeycomb effect. The ambience is chic, minimalist and raw.

The menu offers modern Australian cuisine with a touch of 70s and 80s classics that are still very popular. Try the modern version of Three Bistro’s prawn cocktail, or steak tartare with Melba toast. For something comforting the linguine with crab meat, lemon and chilli will have you groaning for more. Mains feature a number of steaks that all come with mash, bacon wrapped tomato, bearnaise sauce and red wine jus. The Wagyu burger is also a winner, served with a hearty serving of salad and fries. While the food is cooked to the standard one would expect of David Pugh, it is also a simple and fun menu that will attract crowds of regulars.

I had the opportunity to dine at Three Bistro on Monday night. It was fairly quiet in there, but this was mainly I expect due to the fact we were eating at 6.30pm. The interior of the restaurant is quite open and did not have a lot of atmosphere. However, the meal was amazing! I ordered the fillet steak, that just melted in my mouth. The dessert, creme caramel with banana was to die for! My associate had the fish and chips which again, came highly recommended. Will definately be dining their again!review 22/04/2009
