Executive Chef, Paul Leete creates seasonal menus to match each climate change. With a strong devotion to fresh produce, local ingredients dominate his Modern Australian menu. Over the 11 years he has been Head Chef for Sails Restaurant, Paul has established a close relationship with our local growers who share his appreciation for produce grown and prepared with integrity. These relationships guarantee that the Sails kitchen is always offered the best and first pick of the season.
Paul's preference is to use growers who observe pesticide free, organic and non genetically modified farming techniques.
By using fruit and vegetables that compliment our climate, Paul is able to consistently create menus that reflect the very best our region has to offer. Accreditation to these farms is often given throughout his menus as a small thank you to their loyalty and professionalism.
Housing the largest selection of climate controlled wines on the Sunshine Coast, all three purpose built working cellars enable us to ensure the wines are kept at a premium cellaring temperature.

RUMBA WINE BAR
Rumba Wine Bar owns a supper club vibe perfect for your pre dinner drinks or a cheese and wine night cap. The world class cellar offers one of the largest collections of cellared wines in Queensland. Kept at a premium cellar temperature, all wines are cared for by our master sommelier, Michael Brooks. Rumba also offers a tempting range of tapas and cocktails to compliment the wine list. The bar is accommodated with plush furnishings and a modern decor that comfortably blends the old with the new. Rumba Wine bar is open from dusk till late Wednesday to Saturday.
