Fittingly portrayed as Australian cuisine with European and French influence, the Prive 249 menu focuses on the simple use of premium produce, sourced both locally and globally, to compose magnificent dishes. The dedication on uncompromised style extends from the kitchen and into the lavish dining room. From floor-to-ceiling glass windows which offer spectacular views onto the cityscape, to opulent furnishings and intimate, subdued lighting, the interior of the restaurant is a meticulous arrangement of features which complete a glamorous dining experience.

Surrounded by opulence, give into the enticement of entrees like the crisp breaded pig trotter served with cheeky cylinders of Parmigianino reggiano, meaux mustard and a gribiche sauce. Another exciting culinary highlight is the Spanish acorn-fed cured ham, jamon iberico de bellota, which has a reputation for its premier international pedigrees as well as its distinctive flavour and aroma. Main dishes that impress include the yellow fin tuna which comes accompanied by sous-vide, baby fennel, orange, almonds, black olives, and delicately-aged balsamic dressing and the seared Byron Bay Berkshire pork cutlet with nicoise vegetables, pommes gaufrette and charcutiere. The chef has also created an exquisite five-course tasting menu which encapsulates the finest details of the menu in a smorgasbord of culinary brilliance.
