PROFILED BY DE GROOTS MEDIASpanish magic in an open kitchen is what chef Jose Garcia brings to New Farm’s Miro’s restaurant. Brimming with flare and passion for his homeland’s renowned fare, he hand-selects international ingredients to deliver old-world flavour. Traditional Spanish flavours: saffron, paprika, individually-picked olive oils and sherry vinegars complement each dish. The venue itself takes up home in an old Queensland-style shop decked out in deep timber floorboards, pulsating colours and a side terrace complete with vibrant atmosphere. Perfect for a Spanish banquet, Miro’s presents an artful array of traditional tapas which can be coupled with Spanish reds, pitchers of sangria and imported beers.
The extensive collection of tapas spills over a few pages of the menu, ranging from simple traditional favourites to more modern interpretations. Try the
esquixada (thin slices of fresh-caught fish marinated with capers, onions, olives and capsicum) or the
pollo at ajillo (chicken pan-fried in white wine and garlic sauce) to share. You may prefer to opt for whole fresh prawns which come char-grilled with a decent serve of steaming rice or
jamon Iberico; a premium Spanish acorn-fed ham served with crunchy toasted bread and extra virgin olive oil. The legendary paella made with chicken, seafood, chorizo, saffron and fresh vegetables is one of the stars in both serving size and taste. Grab a table, some friends and begin your nibbling journey. Miro’s is the kind of place designed for exactly this sort of thing.
