The Conrad Treasury’s feature restaurant, Marco Polo, will take you to all corners of the globe with a menu that borrows a little from here and a sprinkle from there to create a truly unique final product. The restaurant itself is five-star with a beautiful ambience that has kept the best of the old and shaken it up with the new. With subdued tones of cream, grey, beige and chocolate, the decor is opulent without being over the top. Service is friendly and efficient, with skilled waitstaff managing to meet your every need without intrusion.
The menu travels far and wide through the world, much like Marco Polo himself, using a wide range of ingredients and techniques. The menu makes for interesting reading and offers quite the range of delectable dishes. Oysters are wrapped in nori and pickled ginger then lightly fried in a champagne tempura batter; the Peking duck is served with warm shallot pancakes and hoisin sauce. To cleanse the palate between meals sample the limoncello minted sorbet. Mains are simply impossible to choose between with smoked barramundi, confit spatchcock, rabbit tortellini and Margaret River duck breast all begging to be tasted. If you find it hard to select the food, then don’t hold your breath over the wine list that has over 300 different wines on its many pages. Thankfully, the sommelier is on hand to offer some guidance.

Best described as International cuisine with a modern Australian twist, Chef Stephen Suen takes his art seriously. The signature of the restaurant, the truly sensational Peking Duck, Warm Shallot Pancakes & Hoisin Sauce sees people return to the restaurant time and again to savour the experience. The essence menu ($75pp) featuring 4 courses with matching wines is served Sunday to Thursday and brings the Chef’s finely crafted textures and flavours to the table.
