PROFILED BY DE GROOTS MEDIAThe Marque Hotel in George Street, formerly the Chifley Hotel, underwent a redesign and refit in 2007. The hotel’s fittings are now modern and stylish with a focus on comfort. Its inner-city location sees many Government House and office workers, as well as hotel guests, converge at the hotel’s 103 restaurant for lunch. The priority for the 103 team is to offer silver service with personality. Service is a vital role in hospitality; however diners these days tend to respond more to a personal approach as opposed to something a little too starched. This is definitely the style of service that the team at the Marque Hotel deliver; they service a wide array of clientele and pride themselves on their unique approach to guests – whether it be in the hotel or the restaurant.
The chargrill menu currently offers a grass-fed 200g fillet with olive, rosemary and garlic chicken or veal cutlet served with roasted tomato tart and balsamic and onion jus. Also recommended is the pork belly, which is braised then finished with a crispy skin and accompanied with sauteed Savoy cabbage and glazed apple. Another popular option on the menu is the Wagyu beef brisket, slow-cooked and adorned with porcini mushrooms and served atop a bed of soft polenta. 103 at the Marque is open every day for breakfast, with lunch and dinner available from Monday to Friday.
