DETAILSThe name Selah comes from the ancient Hebrew musical term meaning ‘to pause’. This translates beautifully into the restaurants conceptual design as a place to unwind and escape the hustle and bustle of the city streets, even if it is only for a swift business lunch. The décor is warm and inviting, with a russet feature wall, wooden floors, and dark chocolate coloured tables and chairs. The ambient golden lighting fills the space with a moody glow, perfect for romantic rendezvous.
FOOD & BEVERAGESelah’s menu is all about showcasing the best of Australia’s and New Zealand’s organic, seasonal produce that are manifested in carefully-composed dishes full of bold flavours. Head Chef Gavin Foster has an honest food philosophy all about simplicity, taste, and elegant presentation. For entrée dine on the likes of braised baby octopus with a red wine and tomato sauce, or blue swimmer crab tart with caramelised endive and pear, tomato salad and soft herb crème.
Close ties with local producers have shortened the paddock-to-plate journey for Selah’s menu, and local seafood is always morning-fresh from the market. Try the palmers island mulloway fillet with mussel, chive and buckwheat risotto or the popular lamb backstrap with Jerusalem artichokes, cavolo nero, eggplant, pressed yoghurt, and puffed quinoa. Don’t wrap up that business deal until you have tasted dessert, which is all about texture and seasonal goods. The mandarin tart with soft meringue, shortbread, walnuts and passion fruit mousse is a homely indulgence, and the warm carrot pudding, with baby carrot, hazelnut soil, vanilla cream, and cinnamon ice cream is nothing but extraordinary.
