Quadrant restaurant and ECQ bar are located in a place where you could allow hours to wash away in a wave of thoughts. Whether you have the pleasure of your own company, or are accompanied by an entire party, Sydney’s sparkling view will capture attention in between sips of tropical Extravagance cocktails and mouthfuls of fresh seafood. The unique skyline marked by the Harbour Bridge is invited seamlessly into the décor space through a glass frontage that gives a feeling of nearly stepping right onto the water’s edge. Both the restaurant and bar are hosted by Quay Grand Suites and have a style inspired by the natural elements. Neutral hues with cream marble features characterise the restaurant while the bar embodies light, fresh tones. Abundant natural light fills both spaces, while at sundown the dapple fades to a mood of intimacy, leaving just the glow of the moon during dinner.

Daniel Simpson’s dishes highlight the unique ocean characters of Australian seafood. Seared Queensland scallops are delicately presented on house-smoked ocean trout and balanced with gentle flavours of cauliflower velouté sauce and salmon roe. The grilled meats are of luscious textures between crispy edges that hold intense flavour. Desserts create a fusion of European technique with occasional Asian accents. Diners continuously return for the warm banana bead and butter terrine served with caramel ice cream, mopped up with the crumbs of the accompanying walnut streusel. After dinner, guests move up to the bar where the evening began. They relax onto the low lounges while the patriotic wine list inspires long conversations or time spent sitting together in admiration of the view with no words needed.
