Bella Serventi and Evan Hansimikali, the young Sydney duo of My Restaurant Rules fame, first opened Pink Salt to the public and paparazzi in Manly, in 2005. While they didn't win the series, they received more than enough attention to keep a good thing going, and recently re-opened Pink Salt at Double Bay. The new premises are bigger and funkier with a dazzling white martini bar and a nightclub license so punters can stay until 2am. With a colour scheme that's all fairy floss and raspberry kisses, flowers on every table, plush lounges and hot pink swathes of pashmina to sit on in the outdoor drinking/dining area, this restaurant is undoubtedly designed for the glamour girls.
It would be amiss to start an evening at Pink Salt without one of their pink drinks; a watermelon and rose petal martini or perhaps pink sangria? For entree there's Hiramasa king fish carpaccio, truffle creme fraiche, shaved fennel and kiwi fruit or Twice cooked pork belly, steamed pork dumplings, silan dressing and micro leaf salad. For mains, try the pan roasted barramundi, paired with young vegetables, cod brandade, lamb sweetbreads and veal jus. Finish with a Coconut and Malibu panacotta, coconut macaroon, fresh tamarillo and pineapple anglais. And the sweetest touch of all (besides those calender-perfect waiters in their pink designer shirts?) Take-home cupcakes, sugary and fluffy with strawberry icing that'll tickle you pink.
