Head chef Josh Cook ought to be better known as a modern day gastronomic Picasso to the area, serving honey-cured salmon with orange and chive salsa and Avruga caviar with a glass of Christian Salmon sauvignon blanc, or charred beef carpaccio with truffle salt, manchego and fried egg with a glass of Zisola Nero D'Avola. The confit duck leg with potato and sage torte, caramelised fig and pinot noir jus with a glass of Wooing Tree pinot noir is another winning combination.
Oasi is open seven days a week for breakfast, lunch and dinner in an earthy, wooden-clad casual setting. There’s seating for up to 120 either on the terrace overlooking Miller Street or inside the wine cellar. In addition to a wide range of wine, beer, spirits, soft drinks and snacks available, all wines are served in gleaming Riedel glassware. There is also a deluxe deli selection of fine imported cheeses, dips, breads, olive oils, and cured meats.
