The choice of name for Hilton’s resident restaurant, Glass Brasserie, is not puzzling. After all this smooth, sharp, sparkling restaurant is proud owner of a 13-metre glass facade. And, rather than dominating the dining room, this element works only to embellish it by providing guests with natural light as well as first-rate views of the QVB. Likewise the restaurant’s decor – contemporary brown curved booths, white-set tables, narrow light features, large clothed chandeliers and soaring wine towers – complements this galssy feature with a mix of complexity that wows and simplicity that exudes comfort.
Similarly, the cuisine blends simplicity with wow-evoking delivery. The menu offers several course options which start with appetisers and move through caviar and oysters onto entrees, mains, cheeses and desserts. Begin with the Hiramasa kingfish sashimi with ginger, eschalot and Persian fetta – a bit of a signature for chef extraordinaire Luke Mangan. The lightness of the fish, the sweetness of the garnishes and the slight zest of the accompanying rocket have got to be experienced. As does the playfulness of textures and flavours present in an organic swimmer crab omelette which comes topped with an enoki mushroom and herb salad and a miso mustard broth. Mains present hearty options from the grill as well as slighter, flavoursome selections like a delicious assiette of rabbit. For dessert choc-o-holics can indulge in an assiette of chocolate while savoury-sweet tooths will love the violet ice-cream, peach, white chocolate cream and honeycomb or a cheese platter. Pair the experience with a glass from one of the most extensive wine lists in Sydney (featuring a constantly-evolving 900 wines). THE KITCHEN TABLE
Enjoy a unique dining experience for four to eight guests, combining award-winning dining with stylish design – the Georg Jensen Living Collection delights the eyes and enhances the palate. Choose between à la carte or degustation dining.
PRIVATE DINING ROOM
The Private Dining Area: is available for up to 14 guests. An exclusive table set on the edge of the restaurant, the Private Dining Table is flanked by a magnificent wine wall on one side, and captivating views of the Queen Victoria Building on the other. Choose between à la carte or degustation dining.
THE WINE BAR
is available for up to 30 guests. Perched below the stunning wine towers and overlooking the iconic Queen Victoria Building, the Wine Bar is a sumptuous venue for stand-up canapés and cocktails or Champagne, or for seated dining with your own hand-selected menu for lunch or dinner (Sunday to Wednesday).
