Executive Chef - Tony Dexter. The restaurant is fortunate to have recruited gifted executive chef Tony Dexter and thanks to his insider knowledge, having lived in the region for the past 18 years, has been able to recruit a most talented brigade to support him in the kitchen and restaurant, including sous chef Simon Lee, (formerly of Echoes Boutique Hotel) and Dion Douglas from Tides Restaurant. Tony is also flanked by a team of exceptional restaurant supervisors, cocktail waiters and waitresses, assembled from some of the finest eateries from around the Central Coast region. Originally trained in Switzerland and Sydney, Tony has experience working in both large and small, boutique hotels including the renowned St Gotthard Hotel in Zurich, which has achieved a legendary status for over 100 years. As Chef Poissonniere for their premier seafood restaurant, he developed a passion for using fresh seafood which is now reflected throughout the Barretts a la carte menu. Although Barretts offers a modern Australian menu with Mediterranean influences, Tony's classical French technique can be seen subtly sprinkled throughout his exquisite dishes.
Barretts Restaurant offers opening hours of 6:30am to 10:30am for breakfast, 12pm to 3pm for lunch and dinner is from 6pm-10pm. A special children's menu is available. Resort guests have the added advantage of being able to experience a sumptuous room service menu daily from 11.30am to 10.00pm.
For more relaxed and casual dining and snacks, The Lagoon Bar is open during weekends and on demand during school holidays, while Shallows and Slice Bar are the perfect place to unwind and enjoy a drink with friends. Both Shallows and Slice Bar serve a snack menu, as well as blended teas, espresso coffees and specialty cakes. Slice Bar is open 8:30am until late, while Shallows Bar is open from 4pm until late.
