Don’t be confused by the shop front entrance – this is definitely a bar and a rather unique one at that. Absinthe Salon is Sydney’s very first absinthe-only bar. The brains behind this Surry Hill’s hotspot is that of co-owners Gaye Valttila and Joop van Heusden. But don’t expect to just swig your absinthe in the same way you gulp down a beer - there is quite an art to the process. The absinthe is poured into a glass, a sugar cube is dropped in and then ice-cold water drips from the fountain’s taps. Must be seen first-hand to be fully appreciated.

The servers need to be significantly more friendly. We were rudely told by our server (an older gentleman) that we were not allowed to even taste the absinthe straight. He went so far as to grab my glass to stop me. It was very strange. He seemed to be accusing us of simply wanting to get drunk, rather than being absinthe connoisseurs who wanted a small sip of the straight spirit before adding water.review 09/05/2012
