DETAILS360 Bar and Dining is the glamorous incarnation of Sydney Tower's Level 1 restaurant, lavishly refitted by acclaimed designer Michael McCann of Dreamtime Design. The unique revolving floor system 305 metres above sea level enables guests to enjoy a dining journey, with 360 degree views of Sydney and beyond. With dramatic pendant light sculptures and an interior of hand-carved mahogany, bronze and mirror walls and chocolate-brown leather booths, 360 Bar and Dining is a truly striking and elegant restaurant. The illuminated six-metre long tortoise-shell bar, seemingly suspended in space, is sure to become a place to be seen. With a career spanning over 20 years including working under the likes of Marco Pierre White at L’Escargot and alongside Jamie Oliver at The River Café, chef Ashley Hughes applies his food philosophy of a simplistic approach to cooking, using the best seasonal ingredients and produce available.
PROFILED BY DE GROOTS MEDIAThe amazing night-time view gives it a tourist trap reputation, but this sky-high restaurant offers very fine dining indeed. A first-time visit is often so dazzling it’s hard to condense into specific fragments. A Spring Carnival cocktail, rimmed with pink sherbet, rinses away the tension of the day while the setting sun beams in through the continuous floor-to-ceiling windows. For entree, a caramelised pork belly and roast bug tail complements each other so perfectly the words “surf and turf” don’t even flit across the radar. A veal main course (poached veal loin, braised veal belly and roast sweetbread) works harmoniously with a layer of shaved fresh black truffles. Make sure to order a glass of the Exemplar Heathcote Shiraz. Currently poured by a number of Melbourne venues such as Nobu, 360 is the only Sydney venue stocking Exemplar, a rich red with soft chocolate, dark cherry and rustic oak characteristics.
During the day you can see as far as the Blue Mountains and south past the airport to the National Park, once night falls the city becomes a carpet of twinkling fairy lights and 360 evolves into a silver service, fine dining palace. The winning service fits perfectly into the razzle-dazzle decor. The desserts are frivolous and fun; children’s fancies adapted to grown-up tastes. Chocolate crackle ice-cream and a shot of warm chocolate milkshake escorts the cocoa nut brownie to the table, and divine vanilla bean creme brulee is jazzed up with banana jam ice-cream and a playful sprinkle of chewy caramel popcorn.
FUNCTIONS360 Bar and Dining provides an elegant and sophisticated setting for a range of events including business lunches, Christmas parties, wedding receptions or cocktail parties. The unique revolving setting and decadent interior provides a distinctive space guaranteed to impress. The restaurant can be hired exclusively, for up to 300 people cocktail-style and 150 people seated.
