FOOD & BEVERAGEWith an already popular reputation from his stint as head chef at Twin Town’s Signature Restaurant, Craig Robertson is ready to take on his new role as executive chef at Casuarina’s Balinese-inspired Bamboo Restaurant and Lounge Bar.
Making use of the fresh and local produce from the Gold Coast hinterland and Northern Rivers region, diners will be treated to a sumptuous selection of mouth-watering cuisine. Slow braised rabbit terrine, layered with local sweet potato, braised fennel and leek, with a vino cotto glaze is a signature entrée treat. For main course guests may choose the Balinese duck confit, with bok choy and green tea noodle soup, or the tender oven baked lamb loin, with a rustic artichoke caponata, smoked eggplant Tuscan relish and vanilla bean jus. Dessert is not to be missed, with baked caramel pots, sable chard biscuits and caramelised pineapple relish ticking off all the right sweet notes that will no doubt impress locals and holiday visitors alike.
FUNCTIONS The guest lounge at the hotel is able to hold intimate wedding ceremonies of up to 80 people. The restaurant, set amongst the beautiful backdrop of the lagoon pool and palm trees can host wedding receptions for up to 80 seated guests, or can accommodate 110 people for a cocktail-style function. Small business conferences can also be held in the board room, which seats up to 25 people.
