DETAILS
The décor is a seamless blend of old meets new, complete with detailed chandeliers, leather chaise lounges and red velvet curtains that envelop the large arched windows. White linen-draped tables are set out in a strategic fashion along the sweeping timber floor, accompanied by mahogany chairs and luxe wares. Although the space has undergone significant refurbishment it still champions a noble sentiment of nostalgic beauty from a by-gone era.
FOOD & BEVERAGE
Head Chef Timothy Montgomery injects his unique style of European inspired contemporary Australian cuisine into the Bacchaus menus with a focus on classical technique and the use of fresh, local ingredients. The refined menu features alluring entrées of seared scallops with sweetbread and white asparagus as well as Redgate Farm quail a la bourguignon. For main course dine on the likes of Margret of duck with duck oyster, dates and parsnips or local mulloway with squid, artichoke and saffron. For dessert the cardamom créme, chai vapour, ginger cake, with orange and Grand Marnier ice-cream is a tantalizing choice.
Sommelier Trent Adler boasts a unique depth of wine knowledge that can be attributed both to his national and international experience. The thoughtfully conceived and diverse wine list features a full-spectrum of local and international drops by the glass, half bottles or full bottles. There is also a selection of iconic, rare vintage wines that show complex aromas and flavours like the Henschke ‘Hill of Grace’ Shiraz from the Eden Valley in South Australia as well as the Tyrrell’s ‘Vat 1’ Semillon from the Hunter Valley.
