FOOD & BEVERAGESteven Snow is a pioneer in the culinary realm, using only local organic produce, line caught fish, and sustainable cooking practices to create fresh and flavorsome cuisine. With a seasonal menu centered on locally sourced seafood, diners may select from delicious spanner crab chowder or a tian of tuna sashimi with tobiko, shiso cress, white miso dressing and fish chips for entrée. For main course, dine on the likes of ‘Snowy’s Fish’ – a pan fried, super fresh snapper doused in a tangy Riesling butter-based sauce with lemon and chopped parsley, on a base of cauliflower puree or try Fins signature Moroccan fish tagine that combines aromatic African spices with herb chermoula, sweet potato, fresh dates and preserved lemon. The dessert selection is equally impressive with a lemon myrtle and finger lime pannacotta, accompanied by a ginger and finer lime syrup, stealing the show. The extensive wine list, with its focus on premium Iberian and cult wines, places a strong emphasis on winemakers that practice sustainable viticulture.
