The breathtaking surroundings of the World Heritage Listed National Park are a perfect playground for themed team building events as well.
FOOD & BEVERAGE
Head Chef Lee Kwiez, who worked at Dolder Grand Hotel in Zurich, and earned six consecutive chef hats at Milsons, is bringing his acclaimed style to Darleys using seasonal and regional ingredients to fashion Modern Australian menus. His ability and philosophy is proven on the plate. The angelically executed 500-day, grain-fed wagyu beef dish prepared as a braised brisket with smoked marrow and red wine sauce, is created entirely from Blue Mountain produce. The Megalong Valley in the upper Mountains is strongly represented with farmgate suppliers including Berridale Farm vegetables, Megalong Beef, and pure olive oil. Elsewhere in the region Kwiez is sourcing venison, bush mushrooms, olives, duck egg and cheese. He's also using the best produce from across Australia including black truffles from WA, pheasant from Victoria, hand-picked crab meat from Queensland and ocean trout from Tasmania.

We had the pleasure of celebrating our anniversary at this beautiful restaurant on Saturday night. Such a magnificent old house and being seated beside the fire definitely added something special to our night. The staff were welcoming , extremely efficient and the food was outstanding.Both entrees & mains were a taste sensation. Our only criticism and I don't do this lightly, is that it felt a little rushed. We actually had both courses within 40 mins of being seated, which for us, as we like to take our time over dinner, was just a bit too quick. However, when asked, our waitress did give us plenty of time to relax and enjoy our wine before she bought our delicous cheese platter. I certainly would highly recommend Darleys as the perfect place to celebrate a special occasion & we look forward to returning .

After hearing a new chef had taken over Darleys at the end of 2011, I thought I would take the chance. My previous visit earlier in the year was disappointing but wanted to give the restaurant and the new chef a chance to redeem the reputation of Darleys. I'm so glad I went as our evening was absolute perfection!!! Service was friendly, prompt and staff were knowledgable on the menu. We had the fresh crayfish with pickled vegetables and smoked bone marrow with local wild herbs and flowers. The dish was perfectly balanced and so delicate but full of flavour. The pig belly dish was mouth watering tender with a crispy skin on top. For mains we had the snapper and the beef. Both great portions and so delicious I didn't want them to end!! Dessert topped the night off beautifully with a Chocolate and orange cake which would keep any chocolate lover happy. The peach crumble was so unique and full of textures, every mouthful was a beautiful surprise. Overall, Darley's seems to be in good hands again, and I would highly recommend everyone to go and experience it.
