Event Description:
Savour Chocolate and Patisserie School is run by two award-winning pastry chefs and chocolatiers: Kirsten Tibballs and Paul Kennedy. Both have represented Australia at international pastry competitions, so savour the opportunity to learn from the best by coming along to one of their interactive classes. The courses have such delicious names that just saying them is enough to pad your hips: chocolates and pralines, Christmas gifts, restaurant desserts, French-style gateaux, Gingerbread house making, nougats and jellies, ice-cream, sorbet and gelato… the list goes salivatingly on. The classes are all hands-on in the real sense of the word: participants don’t just watch and learn but actually practice the recipes themselves, gaining the confidence and ability to reproduce their work at home.

The classes cater to different levels of kitchen savvy, and for the accomplished pastry chef or someone looking for that real wow factor, there is a chocolate showpieces class on Wednesday, 12 September. Paul Kennedy (who is to represent Australia at the World Chocolate Masters title in France this October) instructs attendees in chocolate technique and professional presentation. Combining art and couverture, the showpieces are an impressive sight to behold, freestanding and often taking the shape of delicate flowers. All the equipment and ingredients are supplied and students take their creations home with them. Capacity is limited to eight people so register your interest early.
