Serves 2

Ingredients –

3/4 cup sugar
1/2 cup water
100ml white rum
12 apricots, halved with stone removed
1 tbsp lemon juice
2 cups ice cubes

Method –
Place the sugar and water in a small saucepan over medium heat, stirring until sugar dissolves. Increase heat and simmer for five minutes. Remove from heat and refrigerate until cooled completely. Place the sugar syrup, rum, apricots, lemon juice and ice in a blender and blend until smooth.

To serve, dip glass rim in a shallow plate of water and then in a plate of sugar. Pour daiquiri mixture carefully into the glass, and garnish with apricot slices or mint leaves.
