Ingredients –
500g green prawns
1 tbsp Buderim Ginger Refresher
1/2 a lime, finely grated rind and juice
1/4 cup coriander leaves, shredded
Fresh chilli, sliced (to taste)
3 green onions
Sea salt and freshly ground black pepper
Macadamia oil
Method –
Peel and de-vein prawns leaving tail. Slice onion diagonally. Combine Buderim Ginger Refresher, lime rind, lime juice, coriander, chilli, oil, salt and pepper. Pour over prawns and refrigerate for 30 minutes to one hour. To serve, stir-fry prawns in a little oil, grill or barbecue until opaque. Serve with coconut rice.
